Here, I used one of the different methods where the chicken is not deep fried or baked, but rather slightly roasted in some oil.

Step-by-step procedure

Step 1(Marinating the chicken):

  • Take a mixing bowl and add the chicken legs to it.
  • Make gashes or 2-3 slits in each chicken leg and each chicken drumstick.
  • Add salt, red chili powder, turmeric powder, and garam masala powder to it.
  • Mix in the ginger-garlic paste.
  • Also, add beaten yogurt to the chicken.
  • Marinate the chicken for at least half an hour to one hour by refrigerating it.
  • After 30 minutes to an hour, remove the marinated chicken and mix it.

Step 2 (Frying chicken leg pieces):

  • Heat a nonstick frying pan with oil.

  • Place the marinated chicken legs in the pan one at a time.

  • On medium heat, cook the chicken legs for 4-5 minutes.

  • Cook the chicken pieces for 4-5 minutes on the other side on medium heat.

  • Reduce the flame and cook the chicken legs on low flame.
  • keep flipping the chicken legs with the help of a tong until both sides are cooked well.

  • Make sure each side is well simmered for 4-5 minutes to ensure even cooking.

Description

  1. Take each chicken leg, and make gashes or 2-3 slits in all the chicken drumsticks.
  2. Take a mixing bowl, and add the chicken legs to the bowl.
  3. Add salt, red chili powder, turmeric powder, ginger-garlic paste, and garam masala powder.
  4. Also, add beaten yogurt to the chicken.
  5. Mix all the ingredients and the masalas well.
  6. Add lemon extract to the marinade.
  7. Give a good mix.
  8. Cover the lid of the bowl.
  9. Marinate the chicken for at least half an hour to one hour by refrigerating it.
  10. After half an hour to 1 hour, take the marinated chicken out and give a mix.

Notes

  • Do not roast the chicken over high heat because the chicken legs may become burnt.
  • Always use a medium to low flame, and a low flame is highly recommended.
  • To avoid burning the chicken legs, always cook them in a nonstick pan or a flat nonstick vessel with a nonstick base.
  • While serving or eating the chicken legs, sprinkle some lemon juice all over them adding more flavor.
