Simple No-Bake Cookies
For as long as I can remember, I’ve been baking no-bake oatmeal cookies. It’s one of the first things I learned to make as a kid, and I’d make it for my family on weekends because my mom didn’t like dessert (be mindful to watch children when cooking them!). Cookies Recipe No Bake!
They always satisfied the desire for something sweet and were ready to consume quickly. Plus, everyone in my family adored them, including myself, I’m sure. Cookies Recipe No Bake!

Then add sugar, butter, cocoa powder, and milk to a 2.5 – 3 quart pot.
Begin whisking in a pot over medium heat (I prefer to use the largest burner on the stove). Cook and whisk regularly until it reaches a boil, then stop swirling and let it cook for 1 minute.
Remove the pan from the heat and quickly add the vanilla, peanut butter, and oats. And thoroughly mix everything together. Cookies Recipe No Bake!
Drop mixture onto the prepared paper, 2 tablespoons at a time (a medium cookie scoop works well here, or just use two large spoons).
Allow cookies to set before serving. If you wish to expedite the process, place the setting in the refrigerator. Store the cookies in an airtight jar at room temperature. Cookies Recipe No Bake!
No-Bake Oatmeal Cookie Tips
After producing them for the past 20 years or so, I’ve learned a few things along the road. Cookies Recipe No Bake!
- Before counting down those 60 seconds, bring the mixture to a simmer (where the edges of the liquid bubble up), then completely boil (bubbling up in the center).
- Don’t use old-fashioned oats; instead, use fast oats. The cookies will not be set up as well and will be less delicate.
- The recipe should work out perfectly for you, but if they’re too wet, boil 15 seconds longer the next time; if they’re too dry, boil 15 seconds less. The amount of time the liquid is cooked impacts how the cookies firm up and how moist they will be.
- I love creamy peanut butter, but if you want the crunch of crunchy peanut butter, add an extra 1/4 cup to keep the consistency consistent. Cookies Recipe No Bake!
- Never use margarine in place of genuine butter. It has a poor flavor that will affect the flavor of the cookies, and it contains water, so the ultimate product will be less than satisfactory.
- Then, as directed in the recipe, add a touch more cocoa and peanut butter to make them a little richer than you recall. I also reduced the sugar by 1/4 cup, as directed in the recipe.

What do you refer to them as?
We used to call these “uncooked cookies” when I was a child, which is ironic given that they are still cooked. But now I’m thinking they could be dubbed “summer cookies,” because we all have those days when we want a cookie but don’t want to turn on the oven because it’s too hot. Cookies Recipe No Bake!
Of course, we’ll continue to make No-Bake Cookies. But whatever you call these delectable sweets, everyone will adore them!
