We awoke the other morning and shuffled downstairs to our usual weekend morning routine. Breakfast, lounging around in our PJs, discussing our plans for the rest of the day…

We didn’t even bother getting out of our PJs. We went straight to the pantry to weigh our options. What about chocolate chips? No. Coconut shreds? No. What about peanut butter? No.
What was this kitchen up to?

All of the necessary ingredients for our favorite go-to treats were missing. We took a deep breath and gathered our thoughts.
Fresh summer plums, butter, sugar, and flour were on hand. A Fresh Plum Cake is in the works. I could tell we were headed for greatness.
At our house, many “kiddy treats” make their debut. You know the type… Rice crispy treat variations, zoo animal-themed cookies, and candy suspended in jello (You should see some of the stuff we produce around Halloween.)
However, it is beneficial to teach children some traditional and slightly more sophisticated recipes. They appear to enjoy the mature desserts just as much as they enjoy the baking techniques.
Furthermore, these are recipes they can take with them throughout their lives, serving as a springboard to more elaborate meals and ideas. Mommy’s little token.

- 1 1/2 cups regular flour
- 1 tsp. baking powder
- a quarter teaspoon of salt
- 1 tsp pumpkin pie spice, divided
- 1 cup room temperature unsalted butter
- 1 cup sugar plus 1 tsp
- 2 extra large eggs, or 2 large eggs plus 1 egg white
- 6-8 plums, fresh

How To Make This Plum Cake Recipe

Preheat the oven to 350 degrees Fahrenheit. Cover the bottom disc of an 8-9 inch springform pan with parchment paper. Wrap the ring around the disc, leaving the parchment paper in between. Remove any excess paper. Grease the pan’s sides.
In a large mixing bowl, combine the flour, baking powder, salt, and 1/2 teaspoon of pumpkin pie spice.
1 cup sugar and 1 cup butter, creamed in an electric mixer One at a time, add the eggs. Slowly pour in the flour mixture. Scrape the bowl and start over.
In the prepared pan, evenly distribute the cake batter. Cut the plums in eighths. The simplest way I’ve found is to run a knife around the plum.
Arrange the plum slices in a pretty pattern around the top of the cake. Make sure they’re close to each other. 1 tablespoon sugar and the remaining 1/4 teaspoon pumpkin pie spice should be sprinkled over the plums. 45-55 minutes, or until a toothpick inserted into the center comes out clean Make certain not to overbake! Cool for 15 minutes in the pan, then another 10 minutes before serving!

WHAT IF I’M OUT OF PUMPKIN PIE SPICE?
Pumpkin pie spice is a combination of cinnamon, ginger, nutmeg, allspice, and cloves. You can combine a small amount for this recipe, or simply use cinnamon. (Apple pie spice can also be used!)
HOW LONG IS THIS DESSERT GOOD FOR?
Leftover cake can be stored in the fridge for up to 5 days and at room temperature for up to 3 days. You can also freeze it for up to 6 months in an airtight container (or wrapped in plastic wrap and aluminum foil)
HOW SHOULD I PRESENT THIS DESSERT?

- Preheat the oven to 350 degrees F. Place a sheet of parchment paper over the bottom disk of an 8-9 inch springform pan. Fasten the ring around the disk with the parchment paper secured in between. Cut off the excess paper. Grease the sides of the pan.
- Whisk together the flour, baking powder, salt, and 1/2 teaspoon of pumpkin pie spice.
- In the electric mixer, cream 1 cup of sugar with the butter. Add the eggs one at a time. Slowly add the flour mixture. Scrape the bowl and mix again.
- Spread the batter evenly in the prepared pan. Slice the plums into eighths. The easiest way I’ve found to do this, is to run a knife around the plum to halve it, then do the same to quarter it. Split each quarter in half. The little sections should pop off the pit with your knife.
- Place the plum slices around the top of the cake in a pretty pattern. Make sure they are close together. Sprinkle 1 tablespoon of sugar and the remaining 1/4 teaspoon of pumpkin pie spice over the plums. Bake for 45-55 minutes, until a toothpick inserted into the center, comes out clean. Make SURE not to overbake! Cool for 15 minutes in the pan, and another 10 minutes out of the pan before serving!
