Mutton gravy preparation

- Finely chop the onions or process them in a food processor. Cut a green chili in half. The tomato should be peeled and pureed. Set aside the curry leaves after washing them.

- It’s time to add the tomato puree. I just used a tiny amount of puree. You can adjust the amount to your liking. Instead of tomato, you may use fresh yogurt or curd. Sour curd should not be used.
- Cook for another 5 to 6 minutes. The raw tomato scent should be gone.
- Pour some water. Give it a thorough shake. Cook for 2 whistles on medium heat, covered. Cook for 3 to 4 whistles if using mutton with bones. Cook until tender if using a pot. Continue to add water as required.
- When the pressure is released, open the lid. Stir well. Simmer for a few minutes more if the gravy is thin or runny. At this point, you may also add blended desiccated coconut. Cook for a few minutes more.

This simple Indian mutton curry will quickly become your favorite comfort dish. Perfect with basmati rice and made in a pressure cooker.
- Rub the turmeric all over the meat or lamb. Place aside.
- In a pressure cooker (electric or stovetop), heat the oil and sauté the fennel seeds, bay leaf, cinnamon, cardamom, and cloves for a minute.
- Combine two green chilies, onions, and ginger garlic paste in a mixing bowl. Cook for 7-8 minutes, or until the onions are transparent.
- Cook for 5 minutes, or until the tomatoes break down somewhat, with the tomatoes, coriander powder, meat masala, and salt.
- Put the cover on and add the meat, potatoes, and two cups of water.
- Cook on high pressure for 20-25 minutes if using a stovetop pressure cooker (5-6 whistles).
