Today here in this blog I am sharing with you an eggless gluten-free, oats cookie recipe. These eggless oatmeal cookies are dairy-free, gluten-free, refined sugar and refined oil-free, and made without maida or wheat flour. To make eggless and gluten-free cookies grind some flaxseeds, so this is the substitute for egg in this recipe.

 

Ingredients

  • 1/2 tablespoon of flaxseeds
  • 1 cinnamon stick
  • 1/4 cup of water
  • 1/4 cup of oat flour
  • 1/2 cup of grated coconut
  • 1/4 tablespoon pink salt
  • 1/2 tablespoon of baking soda
  • 1/2 tablespoon of baking powder
  • 1/2 cup virgin coconut oil
  • 1 tablespoon of vanilla essence
  • 3/4 cup of rolled oats
  • 1/3 cup of chocolate chips

How to make oatmeal cookies gluten-free 

Step 1:Take one and half tablespoons of flaxseeds and along with this ground one cinnamon stick, instead of this you can also use half a tablespoon of cinnamon powder. And just gonna grind this to a fine powder. Now the flaxseeds and cinnamon are nicely ground and now you can transfer them into another bowl. 

Step 2: Now, add 1/4 cup of water, give this a stir and keep this aside. Into a large bowl add 1/4 cup of oats flour, if you don’t have oat flour you can just take some oat and grind it in the small chutney grinder to make superfine oats flour.

Step 3: Now into the same chutney grinder, add 1/2 cup of freshly grated coconut make sure that you press the coconut really well into the cup. Now add 1/4 tablespoon pink salt and mix the coconut into the oat flour. Into this add in 1/2  tablespoon baking soda and use good quality baking soda. Add 1/2 table tablespoon of baking powder and give this all a mix.

Step 4: Now take another bowl and add half a cup of coconut palm sugar. This coconut palm sugar is for sweetness. For this recipe, you can also use jaggery powder. Also, measure the 1/2 cup virgin coconut oil or you can use locally sourced wood pressed oil, and mix it well. Virgin coconut and wood-pressed coconut oil have a very neutral flavor.

Step 5: Add into the bowl flax meal and the cinnamon which you have ground earlier and mix this really well. Now add 1 tablespoon of vanilla essence and give this a mix and you can add your wet ingredients into the dry ingredients and give this a mix.


Step 6: Now preheat your oven to 180 degrees C. Into this add in 3/4 cup of rolled oats give this a mix, and now add in 1/3 cup of chocolate chip or you can use chopped dark chocolate. Give it a mix. Now, take a scoop and place it on the baking tray lined with parchment paper. You can add some extra chocolate chips to the top of the cookie dough.

Step 7: And now, bake this in preheated oven for about 15-20 mins at 180 degrees C. Make sure you leave little space between the cookies so that it is easier for them to spread out. You will get about 18-20 cookies with this recipe. After 15 mins take the cookies out from the oven and allow these to cool down on the cookie sheet. Once it has cooled down remove these from the cookies sheet.
