Description
In this blog, I am sharing with you one of my favorite cookie recipes for the fall, they are oatmeal chocolate chip cookies that are moist and chewy. On the inside and just a little bit crunchy on the outside. They are loaded with dark chocolate chips, walnut, and my favorite ingredient, shredded coconut, which you can totally leave out if you are not a coconut fan.
But if you haven’t tried it and you like coconut you’ll be sold. So, you wanna start with room temperature butter, that’s just gonna help the butter combine well with the sugar. If you have cold butter it does not seem to work as well as and it takes longer.
Ingredients
- 1/2 cup of butter(room temperature)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- One Egg
- 1 tablespoon vanilla extract
- 1/4 cup of oat flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt

Step 1: Take half a cup of room temperature butter and add half a cup of just plain white sugar that’s gonna give your cookies that really nice crispy edge. Also, add half a cup of brown sugar, and that gives your cookies that wonderful chew in the center so add these both 1/2, 1/2 beat this up until it’s nice and fluffy. This should take about 5 mins or so.
Step 2: Now add one egg and also use a full tablespoon of vanilla extract, and now add 1/4 cup of oat flour, and now you can half a teaspoon of baking soda, after baking soda add half a tablespoon of salt. And then whisk that all together.
Step 3: Now, you can add your flour and then just scrape down the bowl, when flour and oatmeal are all incorporated, you could take it off your mixer and put in the mixer chips and nuts and whatnot, Now, just keep it on the mixer and mix it for very long.
Step 4: Now you are ready to scoop them, so, just use an ice cream scoop, that is just a two-ounce scoop and this is going to create three-inch cookies, which is the best size of the cookies. And then put them down on your parchment-lined cookies sheet. So there is no need to refrigerate this dough first, and it’s actually better if you go right from mixing to scooping to the oven because then you will get the best texture. You can refrigerate them if you can’t make them right away, put them in the freezer and then freeze the dough.
Step 5: Now, preheat your oven at 350 degrees Fahrenheit and put them into it for about 15 mins, just they start to look golden brown around the edges and they look pretty set inside but not exactly done. After 15 mins take them out and your cookies are ready, if you wait 30 mins they will be super delicious.
