Carrots Roasted in the Oven

Roasting carrots is a simple process that can be used for a wide variety of Roasted Vegetables.

  1. Carrots for Preparation: Wash, peel (if desired; see below), and cut if large. (Baby carrots and smaller carrots can be left whole.)

Is it necessary to peel carrots before roasting them? I like to peel my carrots before roasting them, but it is not necessary. Peeling the carrots improves their look. If you don’t want to peel them, clean them with a vegetable brush to remove any dirt or debris before cooking.

How Long Should Carrots Be Roasted?

These carrots require roughly 20 minutes at 425°F. For the finest flavor, the exterior must be caramelized at a high temperature. If the carrots are soft when pierced with a fork, they are done!

Carrots with Honey Butter Roasted

If you’re not yet a fan of roasted carrots, these honey butter carrots will change your mind. They’re buttery, sweet, and salty all at the same time.

To create them, just toss “classic” roasted carrots in a honey-butter sauce. With one tablespoon of butter and one tablespoon of honey, you can prepare the sauce in about 5 minutes on the burner. Allow the butter to brown for a minute before removing it from the heat and whisking in the honey for optimum flavor.

I’ve said it before and I’ll say it again: roasting any vegetable is the easiest method to add immediate flavor. The oven dramatically changes dull veggies, increasing their natural flavor, caramelizing sugar you didn’t know was in them, and giving them color by browning the outsides. And we all know that color equals flavor!

What You’ll Need to Make Roasted Carrots

But I’ve also added garlic for flavor since I wanted to show you how I add it partway through cooking so you don’t have fried garlic bits on your carrot. I do the same thing with ginger and dry herbs.

Carrot Roasting Instructions

Peel and chop carrots into even pieces, cover with oil, salt, and pepper, and roast at 220°C/430°F for 30 minutes, flipping halfway. Roasted Carrots Recipe!

Optional garlic – add it when you turn the carrots. Instead of harsh burning garlic, you’ll get exquisite small golden chunks of garlic this way.

Roasting at a high temperature is essential here to achieve a beautiful color on the carrots, which adds extra flavor. Most recipes utilize a lower temperature that will cook the carrots perfectly but not brown them (and if you leave them in the oven longer, they overcook and become wrinkly and sad).

It’s preferable to chop them into large(ish) bits so they don’t overcook; otherwise, they’ll become too soft.

Notes

  • Young fresh carrots or baby carrots can be kept whole for a shorter cooking time. If you use bigger carrots from the store (even if you trim them), they may require an extra 10-15 minutes.
  • Larger carrots can be sliced into 12″ slices and cooked for a few minutes longer.
  • Add 1 tablespoon honey or brown sugar before cooking for a sweeter glazed carrot.
