Slow Cooker Chicken Recipes Easy
This slow cooker chicken is one of the easiest recipes to make. All you need is 5 to 10 minutes in the morning to have a perfectly cooked dinner waiting for you when you get home. You can use any cut of chicken you would like here, boneless and skinless work too but these cuts are usually quite more expensive. One of the best things about slow cookers is you can use more inexpensive cuts of meat without compromising on flavor or quality. This recipe also works for a whole chicken, there’s no need to prep it or divide it up, just place it whole into the base of your slow cooker.

SLOW COOKER CHICKEN RECIPE
Ingredients
- 4 Chicken Thighs
- 1 Tablespoon Oil
- 8 Carrots
- 6 Medium sized Potatoes
- 1 Lemon
- 2 Garlic Cloves
- ½ Teaspoon Dried Thyme
- Salt + Pepper
Instructions
1. Season your chicken well on both sides with salt and pepper. Heat a frying pan over high heat with a tablespoon of oil. Once the oil is very hot add the chicken skin side down to brown for a few minutes.
2. While the chicken is browning get started on the marinade. You’ll need the juice of one large lemon. To the lemon juice add a couple of cloves of crushed garlic.
3. Lastly, season the marinade with salt and pepper and run your knife through some thyme. Give the marinade a mix and set to the side.
4. Remove the chicken from the pan and place skin side up into the bottom of a slow cooker. Make sure to pour the juices from the pan over the chicken. For the rest of the meal using any kind of vegetables, you would like or what’s in season.
5. If you are using bigger carrots just cut them in half so they will cook more evenly. The same goes for the potatoes, they cook so well in the slow cooker, just cut them up into quarters and place them in with the carrots.
6. Pour over the marinade and place the lid on, making sure it’s a tight seal so all of the steam will get trapped during cooking, and turn the slow cooker on to low for around 8 hours or high for about 4.
7. After 8 hours you’ll have fallen off the bone tender chicken, carrots, and potatoes without having to spend a large amount of time cooking.
How to make slow cooker chicken
- Season the chicken thighs on both aspects with salt and pepper.
