Vegan Buttercream Frosting
- Preheat the oven to 350°F and coat two 6-inch round cake pans with cooking spray.
- Cream the sugar and butter together in a large mixing basin. Mix in the applesauce and vanilla extract.
- Combine the flour, baking soda, and salt in a large mixing basin. Combine thoroughly.
- Combine the milk and vinegar in a mixing bowl. Once again, thoroughly combine.
- Add the wet ingredients to the dry components and blend with a hand mixer.
- Soak two baking strips in water for a few minutes, then brush off excess water and lay around the cake pans.
- Place the pans on a baking sheet, then evenly divide the batter between the two pans.
- Bake for 40 minutes, or until a toothpick inserted into the centre comes out clean.
- Set the cakes aside to cool while you prepare the icing.
- Using a hand mixer, cream together the butter, vanilla, and milk in a large mixing dish.
- Add the powdered sugar a cup at a time, completely mixing it into the batter.
- After adding the final cup of powdered sugar, hand-mix the frosting.
Vegan Buttercream Frosting
- When the cakes are totally cold, take the first one from the pan, place it on a cake board, and cover it with a thick coating of frosting.
- Place the second cake on top of the first, then frost the whole thing. For the best-looking frosting, use a frosting smoother.
- Starting at the bottom, push the sprinkles of your choice up along the edge of the cake with your hand.
